Just outside Limoges, there is a peaceful haven where the lush vegetation is at its most beautiful. Time seems to stand still at La Chapelle Saint-Martin, where guests can step back in time and experience what life in the private residence of this 19th century porcelain manufacturer would have been like. Those who are partial to a beautiful landscape will instantly fall in love with the chapel surrounded by 35 hectares of 200 year-old trees. The surrounding countryside is delightful, and the grounds, ponds and old dock are the perfect place for quiet contemplation. While the house and gardens are historic, the inspirational cuisine is refreshingly modern.

Set in a bucolic haven just a few kilometres from Cognac, "La Nauve Hôtel & Jardin" invites you to relax and recharge. Enjoy a few lengths of the pool or take a stroll in the formal gardens, which extend over nearly 10 acres (four hectares) to the Charente river. You can also reach the center of Cognac, an iconic city of art and history, by private boat, via a canal that crosses the property. This Belle Epoque residence and former distillery, dating to the 19th century, have been meticulously restored by a local architect. Local materials, such as avy stone, bring soul and authenticity to the rooms and shared spaces. In the kitchen, Chef Anthony Carballo channels glorious nature, highlighting products from the hotel's vegetable garden and orchard.

The Saint-James occupies buildings designed in 1989 by the famous architect Jean Nouvel. They nestle in the delightful little village of Bouliac, in a garden fragrant with lemon trees and antique roses. Inspired by the old tobacco drying lofts, four pavilions, linked by a gallery, create a modern pure space. Far away, you can see the Landes of Gascogne forest, the biggest collection of maritime pines in Europe. The gourmet cuisine is one of the major attractions of the Saint James: the chef serves cuisine which is full of flavour and based on local market ingredients, rounded off by the selection of wines from an outstanding cellar and panoramic views of Bordeaux.

The pearly white monkfish and its black olive sauce tell of Gods battling in the skies over Aubrac: your plate is a fragment of the universe. Author Henry Miller knew and loved France better than many French people. He was always in search of, inspirational locations. He originally planned to spend a week at this hotel in the heart of the black Périgord but ended up staying a month. Inside the former tobacco drying barn that has been converted into a dining room or outside under the linden trees, Miller’s spirit lives on. Like the author, you will appreciate the tranquillity of this former priory with its lovely gardens, babbling brook and natural pool in which you can swim. While away the hours in a relaxed atmosphere until dusk approaches and it is time to do a tasting of some fabulous regional wines.

This 19th century mansion combines all that is great about the southwest of France and the Landes, the country of dunes and wide open spaces. The scent of the sea pines drifts over those relaxing by the swimming pool or on the white sandy beaches, only a few kilometres from the Relais de la Poste, or those surfing the famous waves of the Landes coast. Chef Jean Coussau concocts with great talent flavorful gourmet recipes originating from the region between the Basque Country and Bordeaux, with its wealth of exceptional products, like Adour lamprey, hot duck foie gras with grapes, sand asparagus from the Landes or Gillardeau oysters on a bed of chanterelles.

Enamoured with Château de Couffour, they added a playful twist to its medieval charm by creating a sleek angular building to house their restaurant. This same creative freedom is expressed by the ever-evolving cuisine, which finds its roots in the riches of Auvergne. A native of the region, Serge Vieira passionately works to blend the flavours and textures of the products he knows so well. And as he once wished to be a designer, he puts great effort into the composition of his dishes.
