From its home in the heart of Bordeaux, Saint-James is the ideal starting point for exploring one of the oldest and most prestigious wine-making areas in the world. Taste the diversity of the vast terroir of Gironde, made up of six wine regions with distinct attributes. Gastronomy, some say, is the art of sharing. That's why chefs are so keen to share their passion for the region and its produce with amateur cooks, young and old, beginner or experienced. To embark on a culinary odyssey or explore a classic from French cooking, join Côté Cours, the cooking workshops led by the Saint-James team. Discover trade secrets and useful techniques from professionals, and give free rein to your talent in a friendly and empowering setting.

Cook like a chef

At the heart of the estate, 900 organically farmed Merlot vines produce between 400 and 600 bottles of Vin du Jardin (or ‘Garden Wine’) each year. Guided by consultant oenologists from Derenoncourt, the Saint-James gardener oversees cultivation of this micro-production through to harvest. This exclusive vintage is served only at the hotel’s bar and restaurants–and if your stay happens to coincide with the annual harvest, you are welcome to join in the grape picking.

With its open kitchen and intimate dining room, Le Saint-James stands as a beacon of sustainable gastronomy. The chef’s culinary creativity is fueled by the changing seasons and inspired by ingredients sourced from artisanal producers across Aquitaine. Featuring around 1,700 references, the wine list similarly reflects strong local connections, with a quarter being wines from Bordeaux.

In the heart of the village of Bouliac, Café de l’Espérance reimagines the spirit of a traditional French bistro. With a warm and welcoming atmosphere, its hearty cuisine is complemented by an exemplary wine cellar, featuring great Bordeaux vintages and well-chosen examples from Burgundy and the Rhône Valley, alongside lesser-known, more exclusive bottlings.

Taking its name from the Ancient Greek orâma (or ‘view’), the restaurant lives up to every expectation: perched on the heights of Bouliac, it commands sweeping views of Bordeaux and the Garonne Valley. Bathed in light and opening onto the garden, Orama offers local, seasonal, bistro-style cuisine, amid a convivial atmosphere that’s perhaps best experienced during Sunday brunch.

The Saint-James occupies buildings designed in 1989 by the famous architect Jean Nouvel. They nestle in the delightful little village of Bouliac, in a garden fragrant with lemon trees and antique roses. Inspired by the old tobacco drying lofts, four pavilions, linked by a gallery, create a modern pure space. Far away, you can see the Landes of Gascogne forest, the biggest collection of maritime pines in Europe. The gourmet cuisine is one of the major attractions of the Saint James: the chef serves cuisine which is full of flavour and based on local market ingredients, rounded off by the selection of wines from an outstanding cellar and panoramic views of Bordeaux.

Positioned in the heart of the vineyards, the 80-foot-long/25-meter-long Saint-James pool offers breathtaking views of Bordeaux and its surroundings. After a few laps, relax poolside facing the property’s four pavilions, which are inspired by traditional tobacco-drying barns. A glass of Lillet–the region’s emblematic aperitif–is the perfect accompaniment on the 'Balcony of Bordeaux.'

Experience the Saint-James exactly as architect Jean Nouvel envisioned it back in 1989. Now faithfully restored, the Harley-Davidson Suite has regained its original raw, minimalist aesthetic, featuring concrete floors, stucco walls and bold, graphic lines. The centerpiece of the decor–a motorcycle, transformed into an unexpected design statement that’s simply spectacular.

Since its establishment in 1989, the Saint-James has cultivated close ties with the world of art, architecture and design. Alongside architect Jean Nouvel, sculptor César Baldaccini inaugurated the first vines planted in the gardens that same year. Today, the gallery–which connects the 18th-century farmhouse to its signature pavilions–hosts several exhibitions each year, showcasing the work of emerging talents and established artists, including painters, photographers, sculptors and more.
