To love Marseille means to love the Mediterranean, inseparable from the city, just like Gérald Passedat’s three-star cuisine. First come sea anemones, bonito, sea urchins, crabs and shellfish. Then fish occupies the heart of his cuisine. More than 65 varieties are fished locally over the year, such as tub gurnard, rascasse, red porgy, comber fish, common dentex, in compliance with the guidelines for the protection of maritime resources. Le Petit Nice

This beautiful stone farmhouse, so typical of the Provençal landscape, is located on the Luberon hills between the famous villages of Gordes and Roussillon. The Phébus & Spa–Villa des Anges hotel occupies a historic site whose origins date back to the Knights of the Order of Malta. Le Prieuré in Villeneuve-lez-Avignon, tucked away in the mediaeval village, with its cottage garden and its trailing wisteria, emanates a rare charm. Jean-André and Geneviève Charial, who also own two properties in Les Baux-de-Provence, say that this former convent epitomises silence and relaxation. In the different rooms and suites contemporary style meets ancient tradition. The menu also pays tribute to the region, with dishes such as duck foie gras with Gariguette strawberries from Nîmes and pot-roasted Costières wood pigeon with fresh sage. The Saint-James occupies buildings designed in 1989 by the famous architect Jean Nouvel. They nestle in the delightful little village of Bouliac, in a garden fragrant with lemon trees and antique roses. Inspired by the old tobacco drying lofts, four pavilions, linked by a gallery, create a modern pure space. Far away, you can see the Landes of Gascogne forest, the biggest collection of maritime pines in Europe. He originally planned to spend a week at this hotel in the heart of the black Périgord but ended up staying a month. Inside the former tobacco drying barn that has been converted into a dining room or outside under the linden trees, Miller’s spirit lives on. Like the author, you will appreciate the tranquillity of this former priory with its lovely gardens, babbling brook and natural pool in which you can swim. The building's history dates back to the 17th century, when the Lešić family, rich property owners and merchants combined a number of semi-detached houses to create a palace worthy of that name. It has been meticulously renovated yet with a touch of contemporary design; its historical character and original layout have been retained and it now offers a small number of independent suites. Each evokes a step in Marco Polo's journey towards China, in a harmonious décor, with top-quality materials.

This historic restaurant in Place de la Madeleine has seen leading Chefs since the 18th-century. In succeeding Alain Senderens, Julien Dumas has carried on the tradition of accessible and democratised fine dining, constantly changing and striving for the ideal food-wine pairing. He serves a modern, inventive menu, open to exotic influences – his carpaccio of bream is inspired by Thai "Weeping Tiger" recipes and his Apicius duck (the signature dish created by Alain Senderens in 1970) now comes served with figs and liquorice. The chalet has a conservatory and a planted and aromatic roof, which illuminate the dining room. With its gentle, spacious rooms and a kitchen with large picture windows, it blends contemporary and classical style, just like the Chef. Jacques Decoret has created a new art de vivre in a historical thermal spa town.
