On the hillsides of Aureville, in the Toulouse countryside, Isabelle and Frank Renimel have designed a welcoming and authentic home with a touch of whimsy. The brick and pebble walls of the old building have been preserved and stand in exquisite harmony with the new additions of sleek geometric lines. Il Luogo Aimo e Nadia was opened more than 50 years ago by Aimo and Nadia, partners in life and work, and is famous for both its cuisine and for its setting, an artistic and architectural project with Paolo Ferrari, in which performances combine culinary art, theatre and fine art. Their daughter Stefania is now at the helm of Il Luogo, alongside the Chefs Fabio Pisani and Alessandro Negrini, who produce a creative cuisine: their style reveals unsuspected flavours. Their dishes are the fruit of both traditional and contemporary techniques, and give perfect expression to the complex culinary heritage bequeathed by the culture and nature of Italy.

This hotel is the dream child of Carlino Cinque, who was passionately in love with this place and commissioned a villa on a promontory with breathtaking views of Praiano, Positano, the coast and the rocks of Capri. In the course of time, this dream grew, as did the hotel. Its many rooms have each a private terrace and a wonderful sea view. The interior details include fine terracotta floors with ceramic decoration and doors adorned with frescoes. An elevator built into the rocks leads down to a private beach and to the Carlino restaurant. The spa and tennis court between the cliffs are also not to be missed.

Young chef Ryan Ratino, seen in the United States as a rising star of American-style cuisine, opened the Jônt Restaurant just minutes from the White House, in a neighborhood of Victorian buildings and art galleries. On the first floor, the open kitchen lets diners watch the team of chefs work in perfect tandem to create a refined meal to the sounds of a hip-hop-inspired playlist. Having acquired considerable technical mastery, the chef is easy-going as he plies his trade. The inspiration he finds in Japanese cuisine is expressed in the simple, perfectly selected ingredients. The Jônt Restaurant takes guests on a journey through the chef’s well-balanced flavor combinations, such as his tarts of Wagyu tartare with marmite made from Japanese barley, or his Miyagi-sourced Sasanishiki rice topped with king crab, cultured butter, and truffle.

The Kanamean Nishitomiya is one of the ryokans which have survived in the modern surroundings of downtown Kyoto. The wooden architecture hosts only eight suites which lead to a little Japanese garden with seasonal flowers. Futon, tatamis, bamboo furniture… true serenity is prevailing. Mr and Mrs Nishida, the fifth generation of hoteliers in this property, welcome you personally, respecting the Japanese tradition of hospitality. Like the very beautiful crockery in which the dishes are served, your hosts look after every detail inspired by the history of the Honeyanocho district, renowned for crafted fans, which have given their name to the hotel.

In this acclaimed traditional Ryotei restaurant on the outskirts of Osaka, Japan’s landmark city, Kashiwaya Osaka Senriyama offers modern Japanese food in a dining room designed in the “Sukiya” style, Japan’s traditional format for tea ceremonies: Fusuma sliding doors, shoji paper screens, tatami mats and Tokonoma reception rooms, each executed in a contemporary style. The menu is limited to just eight dishes, which are changed every month. The specialities of the famous Chef Hideaki Matsuo include Amadai, a dish made with grilled tile fish marinated in a salt shrimp “shiokara” dip, and puffer roe boiled in sake, floating on a turnip soup.
