“Never be satisfied.” Franco-Japanese chef Yoshinori Shibuya, the perfectionist, has never forgotten this snippet of advice given to him by the great French chef Alain Chapel. Constantly pushing his creativity to new heights, Chef Shibuya has followed in the footsteps of Chapel and Robuchon, his two inspirations, to create a top restaurant in Osaka. In a minimalist setting, decorated with bronzes and fabrics, you can savour French-inspired marvels, with a deep respect for the products, including the famous coriander lobster salad, paupiettes of sole with foie gras and lamb piccata. Perhaps perfection does exist after all.

La Bécasse

Countless generations of the Gleize family have looked after this 18th century post house. The balconies, the mosaiced walkways and the almond-green shutters are the work of Jany, the latest in the line. In the kitchen he reinvents the Provencal recipes of grandmother Gabrielle, with traditional flavours. Sweets are a tribute to Jany’s father, Pierre, a confectioner. Sample the delicious lavender honey ice cream served in it’s bee hive. A vegetable and a landscaped garden blend flowers, fruit and vegetables. Much more than simply a stopover, this is a voyage for the senses and a stepping stone to reaching perfect happiness.

Just outside Limoges, there is a peaceful haven where the lush vegetation is at its most beautiful. Time seems to stand still at La Chapelle Saint-Martin, where guests can step back in time and experience what life in the private residence of this 19th century porcelain manufacturer would have been like. La Côte Saint-Jacques

This is a property with a palpable sense of history. A century ago, the automobile manufacturer Ettore Bugatti commissioned the construction of this beautiful house, in the typical architectural style of Alsace. Today, it houses La Fourchette des Ducs, the restaurant of Chefs Nicolas Stamm-Corby and Serge Schaal. In this temple to l’art de vivre, which boasts a wine cellar with 3,000 bottlings, the cuisine blends precision and creativity in an exquisite tribute to Alsatian culinary culture. The restaurant offers two dining spaces, depending on the season: the Salon d’Hiver (Winter Salon), adorned with magnificent marquetry by Charles Spindler and various objets designed by René Lalique; and the Salon d’Été (Summer Salon), which sparkles with Baccarat crystals by Arik Levy. La Fourchette des Ducs is also renowned for its inventive desserts, courtesy of Pastry Chef Louise Stenger, who offers unforgettable moments of sweet indulgence.

La Fourchette des Ducs

La Grenouillère, originally a typical regional family restaurant, has become under the amazing starred Chef Alexandre Gauthier, one of France's most inventive chefs, a place which is definitely out of the ordinary. The century-old buildings have been preserved, but two sleek new metallic marquees by architect Patrick Bouchain have redesigned the property. The restaurant, which now opens out onto the garden and greenery, serves a radical cuisine, one that is rooted in the local area and uses freely and imaginatively ingredients from the sea and from hunting and gathering. You can extend your sensory experience by staying in one of the huts in the garden.

La Grenouillère

This 300-year-old house, tucked away in an alley of the majestic city of Uzès, was once the home of the Chambon de La Tour family. Now a historic monument, it has recovered all of its former glory. Behind its imposing façade, a monumental 17th-century staircase and hidden passage lead to guest rooms featuring contemporary decor and picturesque views over the roofs of the old town. The spa is nestled under Romanesque arches and draws its inspiration from ancient traditions of health and well-being. At La Table d’Uzès, Michelin-starred chef Christophe Ducros serves Provençal market cuisine, which can be enjoyed on the patio during summer.

“Authentically up-to-date”, this is how Éric Girardin describes La Maison des Têtes in Colmar; undoubtedly one of the most beautiful historical buildings in Alsace. Built in 1609, this bourgeois residence owes its name to the one hundred and six small stone heads adorning its façade, behind which the couple has been dispensing their exceptional savoir-faire since 2015. After all, La Maison des Têtes is not only a traditional brasserie, but also a discreetly luxurious Michelin-starred restaurant and stylish hotel.
While the historic brasserie serves mainly local dishes, the restaurant transcends all boundaries. Within its sleek interior, indulge in a “journey into the world of plants” and savour a “puffed” Munster cheese with Marc de Gewurztraminer. Cap it off with the sweet “broutilles & canailleries”, before returning to your intimately charming room, where contemporary decor accentuates stunning traditional woodwork.

Restaurant Girardin

A discreet white property with blue shutters, typical of the Vendée region, is home to La Marine, the restaurant of Céline and Alexandre Couillon. This property, located directly on the small port of Herbaudière, at the north-west tip of the island of Noirmoutier, has become something of a mecca for gastronomy. From his parents, the chef not only inherited a restaurant, but also their passion for the sea (his father was a shrimp fisherman) along with strong values of hospitality and respect for produce. He runs the establishment with his wife Céline, as Maître de Maison. For his bistro-inspired menu, Chef Couillon selects only the finest seafood cultivated sustainably. Even vegetables come from his own kitchen garden. Guests wishing to stay the night will appreciate Maison Moizeau which adjoins the restaurant–its rooms feature bright marine-inspired décor, polished parquet floors, white walls and natural materials, and open their windows onto the port and its boats.

La Marine

Set in a bucolic haven just a few kilometres from Cognac, "La Nauve Hôtel & Jardin" invites you to relax and recharge. Enjoy a few lengths of the pool or take a stroll in the formal gardens, which extend over nearly 10 acres (four hectares) to the Charente river. You can also reach the center of Cognac, an iconic city of art and history, by private boat, via a canal that crosses the property. This Belle Epoque residence and former distillery, dating to the 19th century, have been meticulously restored by a local architect. Local materials, such as avy stone, bring soul and authenticity to the rooms and shared spaces. In the kitchen, Chef Anthony Carballo channels glorious nature, highlighting products from the hotel's vegetable garden and orchard.

La Pyramide Maison Henriroux

Not far from the Champs-Élysées and the Hôtel de Matignon, in the heart of the extremely chic 8th arrondissement of Paris, a truly unique gourmet restaurant can be found: La Scène. Its renowned chef and owner Stéphanie Le Quellec presides over the restaurant in a plush and elegant setting reminiscent of a small theatre. After descending the few steps to reach the intimate atmosphere of the restaurant’s dining room, it becomes clear just how well this epicurean address lives up to its name. In the open kitchen, the chef directs her brigade, who silently prepare for the approaching performance. Stéphanie Le Quellec and her brilliant troupe, including a remarkably impressive team of waiters, succeed in conveying the beauty of emotion in a masterpiece that marvellously brings together high gastronomy, refinement and simplicity.

La Scène

In the center of old Quebec City, between the Saint Lawrence River and Place Royale, a property steeped in history awaits. Built in 1686, the vaulted cellars of the Leber and Charest houses, among the oldest buildings in the city, now house a gourmet restaurant which puts La Belle Province firmly on the map of traveling foodies. Welcome to La Tanière³, the experimental and sensorial retreat of chef François-Emmanuel Nicol. Fully devoted to promoting this region, he cooks exclusively with local, seasonal ingredients. No imported products can be found on the menu–with the exception of wine, only Quebec and Canadian terroirs are honored on the plate.

The chef enjoys experimenting with little-known local produce, such as caviar from Lake Saint-Pierre, cherry bark, native plants from Quebec and even Pawpaw, a fruit native to North America with a taste reminiscent of mango. Two distinct dining experiences are offered at the La Tanière³ restaurant: one in an elegant dining room surrounded by captivating decor, the other at the Comptoir-Chef, with a front row seat to observe the kitchen at full steam. In both cases, a chef’s choice tasting menu, accompanied by wine, transports guests to the heart of Quebec’s unique terroir, offering a rich and aromatic palette.

La Tanière³

Far away from the hustle and bustle of the world, you can enjoy at La Torre del Visco the glorious scenery of a valley untouched by man and the modern world. The estate house with its tower dating from 1449 is surrounded by its own eighty-nine hectare farm, romantic gardens full of roses and olive trees bordered by the river Tastavins and the mountain range known as “Ports de Beseit”. The owner grows her own organic fruit and vegetables and makes her own olive oil for the restaurant. Inside the beautiful labyrinthine buildings, immerse yourself in a novel by the fireside, play chess or piano. During the night you can observe the stars on the terrace.

Restaurante El Visco

Bruno Oger left the kitchen of a palace hotel in Cannes and the hustle and bustle of the Croisette to move to the calm of Villa Archange and its shady courtyard in Le Cannet. This 18th century Provencal building, which has been masterly refurbished and tastefully decorated, reflects the sensitivity of the chef who celebrates the classics of French cuisine. With precise execution and skilful composition, his mastery is perfect, the presentation sophisticated. No. 2 oysters and Oscietra caviar precede delicious turbot, celery, Vierge Feuille, shallots and nuts, followed by Yohan Jara's light-as-air, whimsical delights, all delivered with the warmth of impeccable service.

La Villa Archange

Landhaus Stricker is the ideal place for a wonderful holiday on Sylt, an island with exceptional natural surroundings and particularly pure air. You will feel in top form there whatever the weather, whether browsing through the library, swimming in the heated pool or lounging on the beach, well protected by a strandkorb, the wickered beach chair used on the North Sea coasts. The 500 m² spa provides fitness, relaxation and treatments. And as a finishing touch, there are culinary delights created by chef Holger Bodendorf. You will appreciate his culinary creations with a Mediterranean flair: Tuna & Cucumber: marinated tuna, fried tuna, tuna tartar, cucumber drop, cucumber mousse, bergamot foam.
