La Table d'Olivier Nasti

The Domaine de Beaulieu is an architectural gem with elegant facades and interiors in a romantic park, one hour from Le Touquet, between the Opal Coast and Belgium. The subtle balance of classic architecture and contemporary art makes this the perfect setting for what is one of the top restaurants in the region. The Chef pays tribute to Pas-de-Calais producers by using ingredients like Boulogne-sur-Mer scallops, Étaples bass and other fish from the North Sea. Meurin believes that “because of the currents in the nearby sea, the fish become strong and daring, which enhances the quality of their taste”. Savour his creations in two glass-roofed restaurants.

After some three decades and an equal number of stars in the Michelin Guide for the Relais & Châteaux property Le Clos des Sens in Annecy, Laurent Petit returns to his homeland of Haute-Marne to open Le Clos Vauban in Langres: The chef wanted to at last place the Grand-Est region in the gastronomic spotlight. On the ramparts of Europe’s largest fortified enclosure, Laurent and Martine Petit acquired an historic residence surrounded by an herb and vegetable garden. They continue their devotion to passing on their savoir-faire by working hand-in-hand with the chef, Valentin Loison, and the head sommelier – his partner –, Anaïs Bercegeay, the maîtres de maison, a collaboration that first began at Le Clos des Sens. It is the terroir’s essence that is the inspiration for the chef who composes dishes rooted in the local land. A particularly poetic, delicate cuisine is served amid the intimate surrounds of Bulle d'Osier, while more accessible interpretations are on the menu in Mirabelle's dining room. All dishes are complemented by a choice selection of accomplished wines, from Champagne to Burgundy, from Jura to Alsace. Promising a meaningful and rejuvenating stay, Le Clos Vauban offers a handful of rooms and suites, all personalized in their Haussmannian home.

Bulle d'Osier

Nestled on the hillside near the idyllic village of Mane and drenched in Provencal sunshine, this convent was home to nuns before it was converted into an upscale hotel. Protected from the Mistral wind by the statuesque Volx Rock, the building, which dates back to 1613, is a blend of medieval architecture and contemporary design. More than 65 varieties are fished locally over the year, such as tub gurnard, rascasse, red porgy, comber fish, common dentex, in compliance with the guidelines for the protection of maritime resources. The cult dish is “Bouille Abaisse”, light, iodized and zephyr-like, and also the famous Lucie Passedat sea bass. Le Petit Nice

This beautiful stone farmhouse, so typical of the Provençal landscape, is located on the Luberon hills between the famous villages of Gordes and Roussillon. Le Prieuré in Villeneuve-lez-Avignon, tucked away in the mediaeval village, with its cottage garden and its trailing wisteria, emanates a rare charm. Jean-André and Geneviève Charial, who also own two properties in Les Baux-de-Provence, say that this former convent epitomises silence and relaxation. In the different rooms and suites contemporary style meets ancient tradition. The menu also pays tribute to the region, with dishes such as duck foie gras with Gariguette strawberries from Nîmes and pot-roasted Costières wood pigeon with fresh sage. Restaurant Gastronomique Le Prieuré

The name Bernard Loiseau evokes a unique sensory voyage and an authentic culinary experience. Chef Louis Philippe Vigilant has added his talent to the legacy left by his master, with cuisine based on simplicity, powerful tastes and new flavours. La Côte d’Or

The Saint-James occupies buildings designed in 1989 by the famous architect Jean Nouvel. They nestle in the delightful little village of Bouliac, in a garden fragrant with lemon trees and antique roses. Inspired by the old tobacco drying lofts, four pavilions, linked by a gallery, create a modern pure space. Far away, you can see the Landes of Gascogne forest, the biggest collection of maritime pines in Europe. The gourmet cuisine is one of the major attractions of the Saint James: the chef serves cuisine which is full of flavour and based on local market ingredients, rounded off by the selection of wines from an outstanding cellar and panoramic views of Bordeaux.

Le Saint-James Bouliac

Sébastien Bras has been at the helm of Le Suquet since 2009, and is forging his own path, reminiscent of the one his father also took. His intuitive and carefully crafted exceptional cuisine provides the perfect showcase for the treasures of the vegetable world offered by the Aubrac plateau. Imagination is given free rein in subtle pairings and harmonies which express this multifaceted living world. Le Taillevent

Author Henry Miller knew and loved France better than many French people. He was always in search of, inspirational locations. He originally planned to spend a week at this hotel in the heart of the black Périgord but ended up staying a month. Inside the former tobacco drying barn that has been converted into a dining room or outside under the linden trees, Miller’s spirit lives on. Like the author, you will appreciate the tranquillity of this former priory with its lovely gardens, babbling brook and natural pool in which you can swim. While away the hours in a relaxed atmosphere until dusk approaches and it is time to do a tasting of some fabulous regional wines.

Le Vieux Logis

Just a short distance from central Paris, in Ville-d'Avray, Les Étangs de Corot invites guests to unwind in a picturesque and verdant setting. This exceptional hotel, famous as a historic guinguette tavern, is flanked by a forest and ponds, lending it a special aura that feels like a step back in time.
