The floor-to-ceiling glass windows at the Molière, tucked away in a quiet residential district of Sapporo, look out over Maruyama Park. World-renowned French cuisine, executed with a deft touch by chef Hiroshi Nakamichi and the team trained by him over the last almost forty years, is served in bright, modern surroundings. His dishes pay homage to Hokkaido’s rich natural resources and their apparent traditionalism belies great skill in enhancing the flavours of local ingredients: roast duck with salsifi confit, Tokachi beef, herb-scented locally-reared lamb and carpaccio of turbot with seasonal vegetables.

The imposing black-wood structure, reminiscent of a traditional North American barn, has quickly become one of the most sought-after destinations on Canada’s culinary scene. Its success stems from the vision of chefs Eric Robertson and Daniel Hadida, who strive to make the most of the produce grown on the surrounding 42-acre estate. The property includes a farm, vegetable garden, orchard, bakery and wine cellar. Here, they use biodynamically grown grapes cultivated on their own land and from vineyards of the wider Niagara Peninsula to craft their own wines. The menu at Pearl Morissette reflects a similar approach, sourcing as much as possible locally, primarily from small-scale sustainable agriculture, showcasing the chefs’ skill, creativity and dedication to their ingredients. In its rustic-chic dining room, bathed in natural light, every dish reveals the richness of the terroir.

Enamoured with Château de Couffour, they added a playful twist to its medieval charm by creating a sleek angular building to house their restaurant. This same creative freedom is expressed by the ever-evolving cuisine, which finds its roots in the riches of Auvergne. A native of the region, Serge Vieira passionately works to blend the flavours and textures of the products he knows so well. And as he once wished to be a designer, he puts great effort into the composition of his dishes. Located in a beautiful modern villa overlooking a tropical garden in the heart of Bangkok, Sühring is decidedly out of the ordinary. In the kitchen, two chefs, Mathias and Thomas, twin brothers, play together, juggling their childhood memories with traditional German recipes. Notwithstanding the classics, such as Bismarkhering and Spätzle, they offer a modern, even cheeky, version of German cuisine that is always in tune with the seasons. The crispy pork shank melts with delight and the tartlet topped with a beautiful green jelly glittering with parsley powder explodes in the mouth, releasing the subtle flavours of the famous chicken salad.

A subtle mix of Andalusian sumptuousness and Moroccan art de vivre, the Riad Fès reflects its prestigious past and the refined civilisation to which it belongs. This majestic palace is an authentic example of Hispanic-Moorish architecture, boasting four harmoniously styled patios, sculpted doors and zelliges on the walls, stucco arcades and marble basins. The reputation of this restaurant has long been established. In Padua, Veneto, Le Calandre is the place where it all began for the Alajmo family. Founded in 1981 by Erminio Alajmo and Rita Chimetto, it was their sons Max and Raf who propelled this restaurant onto the international scene in 2003, before opening other establishments including the succulent Quadri in Venice. Le Calandre is next to perfection. A true culinary laboratory for chef Max Alajmo, the cuisine is as respectful of its regional roots as it is elevated and atypical. In the intimate and warm dining room, the team skilfully applies itself to the restaurant’s motto: “Take care of each guest as you would for yourself, down to the smallest detail”. Ristorante Quadri enjoys a sublime view over Piazza San Marco. Created in 1831 above a cafe, itself historically renowned, this restaurant was taken over in 2010 by the Alajmo family, fine restaurateurs in the Veneto Region for three generations. The dining room, recently renovated by Philippe Starck, is a reflection of the cuisine: a model of elegance and poetry. Designed by Max Alajmo and prepared in Venice by chef Sergio Preziosa, the menus are an inventive reinterpretation of the traditional cuisine of Italy and the Veneto Region. The combinations are bold and the quality of the ingredients, direct from the Rialto Market, is impeccable. Indulge in such dishes as cauliflower flakes with caviar or tortelli stuffed with crab and served with stracciatella and white truffle.

Upstream from the Victoria Falls, on the banks of the powerful Zambezi River, you find paradise on earth. Royal Chundu, with its two magnificent lodges in the middle of the bush far from the madding crowd, is the place to enjoy peace and quiet in what remains as an untamed corner of the earth. The River Lodge is on the riverbank while the Island Lodge is located on an island, both offering spacious suites with a colonial décor reminiscent of the splendour of the times of the early explorers.
