The magnificent residence of the Sörensen family, Het Roode Koper, stands in the middle of a lush forest. In this idyllic setting where nature greets the eye at every turn, the Chef, Dennis van de Beld, serves seasonal cuisine that was recently awarded one star by the Netherlands Michelin Guide. Above all, the Chef wants his guests “to go on a tasting journey designed especially for them,” and hopes they “can locate the flavours of every ingredient” in his dishes. With this in mind, he highlights “the natural flavour of the products” he uses, which he “combines to perfectly complement each other”.  The associations of flavours and textures are elegantly and boldly orchestrated. Chef Dennis van den Beld dares to offer surprising combinations, such as lobster cooked gently with macadamia nuts, pear compote, pan-fried cauliflower, radishes and liquorice, and wild sea bass with confit of razor clams, basil, mango and celeriac. Diners at Het Roode Koper can now look forward to being treated by a star chef!
