Cook like a chef

The estate contains a genuine treasure: an organic vineyard of some 13 acres/5 hectares, exclusively composed of Merlot. With some 950 vines that produce between 400 and 600 bottles per year, this is a producer that's small in size, but big in reputation. Renowned oenologist Stéphane Derenecourt oversees the cultivation, vinification and harvest of the House vintage. Served exclusively in the hotel bar and restaurant, it perfectly complements the carefully conceived dishes on the menu.

Thanks to an attentive team and a warm welcome, each meal is transformed into a culinary adventure.

Perched on the hillside, Orama overlooks the surrounding vineyards and reflects the changing light, from morning to night. In this bistro-style setting, the chef crafts authentic, seasonal cuisine, made with local ingredients. Sunday brunch sets the tone for the restaurant, with a friendly and welcoming atmosphere.

The Saint-James occupies buildings designed in 1989 by the famous architect Jean Nouvel. They nestle in the delightful little village of Bouliac, in a garden fragrant with lemon trees and antique roses. Inspired by the old tobacco drying lofts, four pavilions, linked by a gallery, create a modern pure space. Far away, you can see the Landes of Gascogne forest, the biggest collection of maritime pines in Europe. The gourmet cuisine is one of the major attractions of the Saint James: the chef serves cuisine which is full of flavour and based on local market ingredients, rounded off by the selection of wines from an outstanding cellar and panoramic views of Bordeaux.

Be surprised. A unique experience!

As soon as it opened, the Saint-James began to focus on culture, arts, architecture and design. With the choice of Jean Nouvel as its architect, of course. But also by commissioning the sculptor César to inaugurate the first sixteen 100-square-metre plots of vines planted on the hotel's grounds in 1989. Then, over the years, the gallery that links the 18th-century farmhouse to the pavilions has been transformed and converted into a space dedicated to the arts. Multiple exhibitions of paintings, sculptures and photographs are held here every year.
