Horseback riding, hiking and other outdoor adventures are part of everyday life at Cataloochee Ranch. Located on the edge of the Great Smoky Mountains National Park in North Carolina, the ranch welcomes lovers of the wilderness for pure air and relaxation. During your stay, experience ranch life in an elegant and picturesque setting. Indeed, traditional cattle breeding, just as the founders of the ranch practiced it in 1933, was reestablished on the 320 -hectare/800-acre estate.

Nearly a century later, Cataloochee Ranch has lost none of its splendor or authentic charm. Scattered around the main building, wooden and stone chalets typical of the region are filled with considered, warm décor featuring local craftsmanship. All have balconies or decks offering spectacular views of the surrounding mountains and gardens of unspoiled natural beauty. At Switchback, the ranch's restaurant, guests enjoy typical Appalachian cuisine with an alpine influence–dishes are made with seasonal ingredients, sourced locally, and mainly cooked on an open flame. In Boulud’s masterful hands, the best American regional products, from Nantucket Bay scallops to Montana beef, are cooked to perfection in a restaurant where a contemporary décor is elegantly juxtaposed with striking neoclassical architecture.

It is in the fashionable district of North Loop, Minneapolis, that chef Gavin Kaysen chose to settle after years working alongside famous French chef Daniel Boulud, at Café Boulud in New York. Housed in a former coffee warehouse, designed in the 19th century by architect William Channing Whitney, Demi is as accomplished as it is discreet. Here, chef Kaysen has curated a culinary experience designed to appeal to a demanding clientele that wants to combine highly original cooking with relaxed conviviality. He has deliberately broken with the codes of traditional gastronomy: twenty guests sit at a U-shaped counter, surrounding the kitchen team as it prepares menus of 7 or 11 dishes–depending on the evening. Accompanying wines are chosen on the basis of their capacity to surprise. While each sitting may begin with a humble bowl of broth, it will evolve to become a feast of flavor and an emotional, visually rich experience to boot. An astonishing piece of dining theater.

Demi

The last inhabitants left in 1918. This former mining town deep in Colorado has been restored from top to bottom and offers an exquisite retreat. Log cabins and spacious tents provide delightfully comfortable rooms; meals are taken in the saloon which has retained its original character, and provides a convivial gathering spot. The landscape of this splendid alpine valley, nestled in the San Juan mountains, changes with the passing seasons, from pristine white snow to flaming orange in autumn. Around thirty years ago, in the now-trendy district Warehouse District of New Orleans, between art galleries and vintage boutiques, chef Emeril Lagasse opened Emeril’s, the restaurant from which he began conquering America with his Creole and Cajun cuisine typical of the Louisiana region.
Enthroned as a successful culinary professional, an American television celebrity chef, and author of numerous cookbooks, the chef decided to turn over the helm of his restaurant to his son, Emeril John IV. In the warmly welcoming decor of Emeril’s gourmet restaurant, as well as in the more relaxed Wine Bar, the young chef faithfully carries on his father’s labor of love through season-specific signature menus composed with ingredients sourced from a handful of carefully selected farmers from the region. Guests love being invited to tour the kitchens to see what will soon be served to them once they are seated.

Alsatian by origin, Gabriel’s homeland is never far away: be it within a leaf of green cabbage, a savory kugelhopf or the restaurant’s stork motif. Having worked his way through the most renowned kitchens of Europe and New York, the chef is now at the helm of a lively restaurant that bears his name in the heart of Midtown. An array of dishes such as delicate frog’s leg beignets dipped in garlic and lemon broth flow in a constant stream from the open kitchen, plated on original tableware by an experienced and passionate team.

The cuisine of Gary Danko, the ambassador of contemporary American fine dining, draws on traditions from around the world. Using seasonings from Asia, he adds a pinch of audacity to his French-style technique, creating dishes like the sublime buckwheat blini with smoked salmon, Kendall Farms crème fraîche and Black Sea Osetra caviar. Danko only uses what’s in season. Sea scallops are served with asparagus-pea purée in the spring and paired with butternut squash and caramelized apples in the winter. In the heart of one of San Francisco’s trendiest districts, his restaurant offers an intimate, inviting atmosphere, with modern paintings standing out against taupe walls.
