An iconic Parisian dining institution since 1978, Maison Rostang is writing a new chapter in French gastronomy. Tradition, innovation and culinary daring come together in perfect harmony in cuisine by Chef Nicolas Beaumann. Dishes are complemented by an exceptional wine cellar, containing 1,500 references, which also makes this a sought-after destination for wine lovers. Located near Parc Monceau, Maison Rostang achieves a perfect balance between bold flavors and fresh, seasonal produce. The chef places particular emphasis on jus and sauces, as well as on the theater of service, with poaching, flambéing and carving of classic dishes performed tableside–an integral part of the dining experience. Recently redesigned by architect Michel Amar, the space blends contemporary lines, natural materials and greenery, while its refined, intimate atmosphere is cultivated by wine cellars visible from the restaurant, a view into the kitchens, bespoke decorative objects and carefully selected tableware.

Cooking classics

Nicolas Beaumann creates dishes at the intersection of traditional cooking and creative cuisine. His imaginative approach bears witness to his training as a saucier (specialist in sauces) and his ability to conjure intensely flavoured jus. The result is an incredible articulation of seasonal produce-his ambition is resolutely creative and culinary research occupies a prominent place in his methodology.

Served in the dining room

We no longer cook with flambé, in order to keep up with the times. Instead, we poach duck foie gras and make cooked-to-order lobster served whole, and some house-made classics are even finished up in the dining room. For example, the carcass of a Miéral duck is put through a special silver duck press, then its meat is sliced before the customer. It is a magnificent spectacle that simultaneously showcases the team's expertise.

The wine cellar

Michel Rostang and I have gathered over 1,300 wines from all over the world over the past 25 years, and we are proud that our cellar is one of the capital's most prestigious. It boasts collectors' wines from legendary vintages, such as the 1875 Château Latour, the oldest bottle in the cellar, as well as bottles from 1961, 1982 and 1990, a 1961 Mission Haut Brion and even a 1947 Cheval Blanc. Each of these years contains incredible sensations...
