Breton Lobster, with a Pinot blanc from the "Le Vin Vivant” collection. One of the local wines able to hold its own alongside the flavours of seafood. Wild strawberries and champagne zabaglione, with a Bernard Ravet Blanc de Blancs brut champagne. The elegance and refinement of a high quality wine that is just as at home as an apéritif.
Naturally, my favourite vintages are from the “Le Vin Vivant” collection, which we created over 20 years ago now in close partnership with a group of local wine producers. Together, we developed a range of wines made from very diverse grape varieties, with a sharp focus on the factors that enhance the complexity, finesse and originality of each wine.
Tasting wines, finding the perfect pairing with dishes, advising and guiding customers in their choices, leading the wine service. Inviting wine lovers to discover the vintages of a new generation of producers who fight for the respect of the vine, its culture and its environment and for the perfect expression of terroir.
Nathalie Ravet learned about wine from her father in his vineyards, then by establishing relationships with wine producers, developing her palate through analytical, comparative tastings. Her father then entrusted her with the keys to the cellar at L'Ermitage and the management of a wine list featuring over 1,000 appellations from every continent. Named “2007 Sommelier of the Year” by the “SwissGault&Millau” guide, Nathalie Ravet confirms that in the kingdom of wine, women are queens!
