For over two centuries, Billecart-Salmon has been driven by an unapologetic vision: to craft champagnes that transcend trends, conventions and expectations. 

Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, alongside Elisabeth’s brother Louis Salmon, and passed down through seven generations, the House remains fiercely independent and family-run. From pioneering low-temperature fermentation to the stewardship of Clos Saint-Hilaire, every decision reflects a deep respect for the vine and its terroirs, along with a refusal of the ordinary. Beyond plots labelled Sustainable Viticulture in Champagne, around 100ha of its parcels are certified Organic, including 10ha under biodynamic practices.

Led by its President, Mathieu Roland-Billecart, the seventh generation, the House continues to create champagnes defined by finesse, depth, and singularity, and enjoyed at the world’s finest gastronomic tables.
