Story of a Chef

How did you become a Chef?

It runs in the family, my father was a chef, he inspired me.

How would you define your cuisine?

Fresh, clean, creative, and seasonal.

What are your favourite products and criteria for choosing?

My favourite products to choose from are normally local, indigenous to South Africa. I like to use smaller local artisan producers.

What is your signature?

To me, it’s very important that a dish is well balanced in flavours and textures. My Signature I would say is well-balanced dishes.

Do you have a Chef’s tip for Sunday cooking?

Brine your chicken slightly before roasting.
