To the sound of the cicadas; fig, lemon and some 60 citrus varieties mingle in an explosion of aroma and color. Their delicious fruit are served to the guests. The 1200 olive trees wear proudly their 2000 year past: their small black nuggets are taken to the neighboring mill, olives of the "caillette" variety, producing an oil as sweet and fruity as the climate of Provence. It can be found at the beginning of each meal, served in a glass carafe to best reveal the bronze tones, ready to taste. Gently poured over freshly sliced bread, it reveals its depth of flavour. And like a trail of breadcrumbs, we find it in the subtle flavors in the Chef’s different dishes. Only he knows how best to mix it with the herbs from his garden.
