The name Bernard Loiseau evokes a unique sensory voyage and an authentic culinary experience. Chef Louis Philippe Vigilant has added his talent to the legacy left by his master, with cuisine based on simplicity, powerful tastes and new flavours. But the food isn’t the only attraction at this stunning Burgundy location: owner Dominique Loiseau has made this hotel exceptional in every way. The breakfast room is a listed historical monument. The dining rooms offer a panorama view of the gardens, the rooms are elegantly decorated and at the spa, the welcome is warm and attentive. This is a magical and timeless place where the idea of well-being takes on its full meaning.

Creative cooking

Authentic flavors, delicious sauces and culinary savoir-faire have been the hallmark of La Côte d'Or for several generations. Today, this gastronomic institution of Saulieu appeals to lovers of perfectly executed classics and curious people in search of new gourmet experiences alike. In the proud tradition of Bernard Loiseau, Chef Louis-Philippe Vigilant has established meaningful connections with local artisans, whose exceptional products he showcases. Alongside innovative pairings like lobster and beetroot, fans of nostalgia will delight in the restaurant's signature dishes, such as frog legs with garlic puree, or pan-fried pikeperch in a red wine sauce.

A gastronomic hotspot since Roman times

The town of Saulieu is part of France's gastronomic heritage. From Roman times to the era of the horse and carriage to the car age, the town of Saulieu has always been a stopping off point for travellers. Grands Chefs have shaped the history of our Relais & Châteaux, such as Alexandre Dumaine and Bernard Loiseau. Today, the Grand Chef Patrick Bertron champions two areas close to his heart - Brittany (where he is from) and Burgundy (where he used to live) - providing an experience full of emotion.

Wine-tasting in the cellars

Relais Bernard Loiseau is home to a wine cellar with a remarkable selection of bottlings (numbering around 900 wines). Overseen by head sommelier and Meilleur Ouvrier de France éric Goettelmann, the wine list is a key feature in each of the hotel's restaurants. You can disover some of its treasures during a 45-minute private tasting led by éric's expert team who will share their passion for the terroir of Burgundy and showcase some of the region's most accomplished wines.
