Creative cooking

A story of cooking, a story of men. In 2015, I asked Glenn Viel to join me as head of the kitchens at the Oustau de Baumanière. First and foremost, it was his cooking that captivated me. True and simple, it respects local products from the terroir. It's also unpretentious, which is how I perceive my own cooking to be. A kitchen in which superfluous frills don't hide the essentials. He brings youth and creativity to the table while preserving the traditional spirit of Baumanière. I also like the man. He possesses a simple straightforward character, with no fuss or pretenses. He is from Brittany, which may explain this.

Fine wines and olive oil

The history of Baumanière is intertwined with that of viticulture, and a passion for oenology has been passed down through generations of the estate's owners, whose cellars boast over 50,000 bottles. Its own wines include L'Affectif, available in red and rosé, and crafted in conjunction with the Domaine de Lauzière estate, and L'Invitation – in white and rosé, created with the Fontchêne estate. Another nearby estate, Moulin de Castellas, offers a chance to taste another of the region's most emblematic products: olive oil.

The kitchen gardens

Since the estate was established, its vegetable gardens have been at the heart of Baumanière: they represent the property's sense of deep connection to the land and its respect for all living things. Guests are free to explore this half-acre site, cultivated with respect for biodiversity, by following its rows of vegetables, herbs and edible flowers. You may come across the gardener, busy tending to his seedlings. Located just footsteps from the kitchens, these gardens inspire the chefs on a daily basis, as they place vegetables at the heart of their dishes.
