"When I was a child and teenager, I always enjoyed helping the farmers in my village and since that time , I have a deep respect for these men and women of the earth who have a boundless passion for their craft. I now share their values. My local producers deliver the best, most flavoursome products. And that flavour drives me forward in my cuisine. My meetings with farmers on their farms are essential and inspire my new recipe ideas. I really want to support young farmers and high altitude farming. Chefs also have a role to play.
