Salina is the greenest of the seven Aeolian Islands that emerge from the deep blue Tyrrhenian Sea. While the 1960s architecture of this building–designated a National Monument of Portugal–is undoubtedly its most visible hallmark, its other notable distinction is the cuisine crafted by chefs Rui Paula and Catarina Correia. Located north of Porto, with ocean waves crashing at its feet, this unique spot perched on a rock facing the Atlantic serves as continual inspiration for the two chefs. The menu at Casa de Chá da Boa Nova pays tribute to Portuguese poet Luís Vaz de Camões and unfolds in a sequence of 6, 12, or 21 dishes, here called ’songs’, each showcasing the quality of seafood and other local flavors. Lobster pairs with corn, octopus with sweet cucumber, scarlet shrimp with broccoli and kaffir lime, and red mullet with asparagus. A creative and generous menu, a true ode to nature, complemented by an impressive selection of over 450 wines, mostly Portuguese.

Casa de São Lourenço is nestled in the Serra da Estrela, a mountain range that is home to the UNESCO-recognized Estrela Geopark. Perched at an altitude of 4,100 feet among pine trees, this former pousada (traditional guesthouse) enchants outdoor enthusiasts all year round. The architects who led its modern makeover succeeded in preserving its original character, while enhancing its connections to the land by adding beautiful panoramic terraces.
