From the Renaissance wing to the Napoleon III balconies, the 16 bedrooms here are embellished with authentic old materials, mirrors, woodwork and flagstones, all fully renovated by Marie-Christine and Didier Clément. Chef Didier Clément pours his talent and artful touch into developing groundbreaking natural flavors in dishes designed to sit alongside an incredible wine list, in which the wines of the Loire Valley are given pride of place.
