I studied at Carlo Porta Institute, a hotel school in Milan and I choose sommelier specialization. After a stage as commis sommelier, wine became my passion and the purpose of my ‘life’.
Wine is my philosophy. I like Italian and French wines and love their elegance.
I am fascinated by the great quality of some wines, their history and the storytelling behind each label.
Our cellar has a wide collection of rare and old wines. Each bottle has its own story.
My favourite pairing is the one I suggest with our most emblematic dish: spaghettoni al cipollotto. It matches perfectly with an old harvest Ximenes Spinola because of the sweet note of the onions.
Studying the perfect combination of food and wine together with the chef is always a great experience. We try different wines before choosing the perfect one.
