From June 24 to July 4, 2026, within the singular setting of Matsalen–the restored former chapel of the Swedish boutique hotel–Chef Varun Totlani and his team from Mumbai will present an unprecedented culinary fusion, pairing the aromatic richness of contemporary Indian cuisine with the purity of Scandinavian summer flavors.

Structured around seasonality, fire, fermentation and a profound respect for quality ingredients, this gastronomic dialogue promises to be a rare gourmet interpretation of contrast and harmony.

“What excites me most is combining the warmth and intensity of Indian flavors with the restraint and minimalism of Scandinavian cuisine,” says Chef Totlani.

Six- and ten-course menus that celebrate the twin terroirs of India and Scandinavia will be served for dinner from Wednesdays to Saturdays, as well as for lunch on Fridays and Saturdays.
