"My cuisine celebrates high-quality seasonal products while harmonising with simple tastes. Long cooking times and short chains are the two pivots of my cuisine. Cuts of meat require long cooking as do home-made broths and stocks. The short chain concerns the supply of products such as game, butter or cheese from the Ferme des 30 Arpents, owned by the Rothschild family. Our very dynamic menu consists of signature dishes and new suggestions."
