A cooperative founded in 1960 by a group of young milk producers, Jeune Montagne preserved the method of making specialty Aubrac cheeses with raw milk.
Its vitality comes from historic traditions and its original terroir: Aubrac. The Jeune Montagne Cheese Cooperative is a tool for milk producers to guarantee fair and united farming practices in Aubrac. It ensures a fair return on investment. With a reservation, a guided tour will show you the traditional methods of the Laguiole AOP (protected designation of origin). You will be able to compare the tools currently used with those that used to be used in the burons, although the same actions are still used.
