HOSEKI–or ‘jewel’ in Japanese–offers a contemporary interpretation of Japanese cuisine, available to order à la carte or as an omakase (set menu). Chef Virgil Kahn prepares meticulously crafted dishes with sustainably sourced fish and locally reared Wagyu beef alongside freshly harvested vegetables from the estate's own garden and greenhouses.
