We do not use exotic fish or fish born from intensive, destructive practices. All our fish is sourced from local suppliers and sourced according to the seasons. We collect herbs and vegetables daily which are grown by members of the St Raphaël Centre in nearby Youghal, which is a centre for disabled members of the community. All efforts to minimise and reduce waste are made by all members of our team to align with our eco friendly strategy to cut down on waste costs.
