The 7 Seasonal Flavour Profiles of our cuisine are inspired by the abundance of Quebec and Canada's rivers, lakes, fields and forests. The first harvest of every year occurs in Spring with the Tree to Table Birch Syrup and Birch Vinegar Production made by tapping Birch Trees right on Manoir Hovey property. Always seeking a balance between texture and flavour, our Chef never hesitates to experiment with new culinary methods. Intrigued by both traditional and cutting-edge approaches, he often uses rare or forgotten ingredients.
