We asked ourselves many questions while creating our menu. How can we evolve with our food if we are at the mecca' of evolution? These were deep thoughts which led us to unexpected paths where many times we looked for answers within the complexity of the process. But little by little the islands made us simplify and start from the basic concepts, from the ingredients, technique or the tradition.
