Countless generations of the Gleize family have looked after this 18th century post house. The balconies, the mosaiced walkways and the almond-green shutters are the work of Jany, the latest in the line. In the kitchen he reinvents the Provencal recipes of grandmother Gabrielle, with traditional flavours. Sweets are a tribute to Jany’s father, Pierre, a confectioner. Sample the delicious lavender honey ice cream served in it’s bee hive. A vegetable and a landscaped garden blend flowers, fruit and vegetables. Much more than simply a stopover, this is a voyage for the senses and a stepping stone to reaching perfect happiness.

In the heart of Uruguay’s most exclusive seaside resort, Chef Jean-Paul Bondoux has recreated a piece of his native Burgundy. In a quiet residential area of Punta del Este, surrounded by a magnificent garden, Bondoux produces authentic French cuisine using products from his own farm, like zucchini flowers stuffed with chicken or roast rack of lamb in garden herbs. “My cuisine is close to the land,” Bondoux says. “I love thyme, rosemary, garlic, onions, tomatoes – everything that comes from the earth.” The boutique next to the restaurant pays tribute to the terroir of France with brioches, croissants and cheeses that can’t be found anywhere else in Uruguay.

Once a refuge for impressionist painters, La Ferme Saint-Siméon Hôtel & Spa is celebrated for its bucolic surroundings and beautiful Seine estuary light. Monet and Courbet would come here and work on their colours, and Baudelaire would flee the melancholy of Paris in search of inspiration. The farm, close to the old harbour of Honfleur and the Eugène-Boudin Museum, has now been restored throughout and provides relaxing treatments based on organic ingredients such as milk and Normandy apples. “Oh, Saint-Siméon”, exclaimed the painter Eugène Boudin in one of his journals.
