STORY OF A CHEF

How did you become a Chef?

I just love cooking. I started  cooking  in a restaurant at age of 13. My first position was a dishwasher, then trainee, commis and so to this day.

How would you define your cuisine?

My cuisine is new (contemporary) Bulgarian cuisine.

What are your favourite products and criteria for choosing?

I prefer to work with home grown products and that is the case in the summer and autumn. Otherwise I am partnering with local quality producers.

What is your signature?

My menu is seasonal and varies  but  if I have to choose  a signature dish It would be the Duck with pumpkin and apple.
