"To get to Puymirol, the food lover has to become a pilgrim on the Way of St. James. Gascony is at the intersection between Guyenne and Quercy, and is the land of taste and affection as well as my adoptive country. In the heart of France, the best fine produce, truffles, poultry, game, lamb, foie gras, farm vegetables, orchards, and wine from the South-West are blessed by nature. A chef such as myself is lucky to be able to embrace all this richness from the earth, staging these treasures by creating crystallines; warm foie gras with porcini mushroom hamburgers; potato papillotes with truffles; and chocolate tear drops with Morello cherries..."
