The Zornitza Family Estate lies among the rolling hills and vineyards of southern Bulgaria. The area is known for the purity of its air and its volcanic origins have endowed it with fertile soils, a curative spa mud, and natural mineral water.
The owner’s vision was to create an oasis of calm for guests, in complete harmony with nature. The hotel’s materials are largely natural and the hotel sources ingredients from its surrounding eco-farm on the 200ha estate. Here, organic herbs, fruits, and vegetables are tenderly cultivated. Honey, preserves, and truffles are also produced—the latter the fruit of an extensive tree planting scheme. The owner has also introduced 5ha of new vines for small-volume, high-quality production, with grapes harvested by hand and pressed on-site. The result is true “farm to fork” restauration with a respect for the area’s landscape and native wildlife.
