After some three decades and an equal number of stars in the Michelin Guide for the Relais & Châteaux property Le Clos des Sens in Annecy, Laurent Petit returns to his homeland of Haute-Marne to open Le Clos Vauban in Langres: The chef wanted to at last place the Grand-Est region in the gastronomic spotlight. On the ramparts of Europe’s largest fortified enclosure, Laurent and Martine Petit acquired an historic residence surrounded by an herb and vegetable garden. They continue their devotion to passing on their savoir-faire by working hand-in-hand with the chef, Valentin Loison, and the head sommelier – his partner –, Anaïs Bercegeay, the maîtres de maison, a collaboration that first began at Le Clos des Sens. It is the terroir’s essence that is the inspiration for the chef who composes dishes rooted in the local land. A particularly poetic, delicate cuisine is served amid the intimate surrounds of Bulle d'Osier, while more accessible interpretations are on the menu in Mirabelle's dining room. All dishes are complemented by a choice selection of accomplished wines, from Champagne to Burgundy, from Jura to Alsace. Promising a meaningful and rejuvenating stay, Le Clos Vauban offers a handful of rooms and suites, all personalized in their Haussmannian home.

At the end of a drive bordered by century-old trees, this 16th century country house, set in the heart of magnificent landscaped grounds, offers an exquisite, tranquil retreat, just minutes from Montpellier city centre. Contemporary furniture is a graceful companion to its beautiful old stones and meticulously restored antique mosaics which combine to create a cosy cocoon. The 17 hectares of Verchant vineyards which surround the house, produce wines which can be sampled in the restaurant served with Mediterranean cuisine. Marcelle Restaurant is closing temporarily for a renovation. It will reopen in spring 2025 with a spectacular new look and a new culinary philosophy. La Plage Restaurant remains open.
