With the changing seasons come ever evolving wine pairings to compliment the Ambitious Terroir Driven Quebec Cuisine of Le Hatley Restaurant. The 7 Seasonal Flavour Profiles of our cuisine are inspired by the abundance of Quebec and Canada's rivers, lakes, fields and forests. The first harvest of every year occurs in Spring with the Tree to Table Birch Syrup and Birch Vinegar Production made by tapping Birch Trees right on Manoir Hovey property. Always seeking a balance between texture and flavour, our Chef never hesitates to experiment with new culinary methods. Intrigued by both traditional and cutting-edge approaches, he often uses rare or forgotten ingredients. Our Sommeliers are always on hand to find the perfect wine pairing for each new seasonal creation!

Drawing from his roots as a French Canadian growing up in Ontario to frame his culinary vision and serve as inspiration for his cuisine. Chef Alexandre Vachon's philosophy is best defined as a refined roots driven cuisine. His cuisine is a true ode to the Quebec and Canadian terroir.

Le Hatley Restaurant

A Bistro-style restaurant, the Tap Room showcases local and seasonal flavours in a relaxed atmosphere and a magnificent setting. The Tap Room offers a varied menu year-round, including signature dishes such as quail stuffed with mushrooms, smoked trout and our famous Abenaki poutine. The decor is warm and the 10,000-brick fireplace invites you to relax as you admire the many artifacts that adorn the walls and tell the history of this place.
