Chef Joho embodies the American dream: 30 years after leaving his native France, he has become one of the most respected chefs in the U.S. Everest, his restaurant on the 40th floor of the Chicago Stock Exchange, offers stunning views of the city through large bay windows. Joho offers personalized French cuisine, creating delicious surprises with combinations like foie gras or caviar paired with the humble potato and turnip. In honor of his homeland, Alsace wines star in many of his recipes, like Roasted Maine Lobster in Alsace Gewürztraminer Butter and Ginger.
