Taittinger Chef Trophy : Kazunori Otowa, Otowa Restaurant, Japon

Born in Utsunomiya, chef Kazunori Otowa spent many years in Germany, Switzerland and France mastering his culinary skills. It was his time with chef Alain Chapel that made him realise the importance of roots in food culture, and which led him to open a restaurant in his hometown. His three children now work by his side.

“I am very honoured to receive this trophy. Since I opened my restaurant in Utsunomiya, I have always wanted to focus on local products (not only food, but also tableware, furniture, art and more) so that our guests can feel the whole beauty of the region. For me, it is important to connect to your roots, and I admire the way French cuisine maintains its traditions while also adopting great culinary practices from all over the world. Japan, itself, offers many techniques in the fermentation and ageing of food, the heirs of ancestral wisdom. I am thankful to all of the farmers, artists, members of my team and my family who have supported my dream for so many years, and I hope we continue to develop this restaurant as a place local people can be proud of.” Kazunori Otowa, Chef
