Originally from Bordeaux, his passion for wine took him to Germany and the Rheingau region. Here he created a wine menu with over 500 wines classified by nationality. However, as he indulges his passion for wine in a place surrounded by the vineyards of the smallest wine region in Germany, Rieslings are - fortunately - very well represented on the menu.
The most interesting part of my job is when I get to talk to guests: this always generates new ideas and new suggestions. There are always new wines to try and taste.
Rheingau Riesling
Its southern exposure, the banks of the Rhine, which retain the heat, and the warm summers followed by mild, dry winters are all responsible for the character of this Riesling. Wine lovers will appreciate the mineral aromas caused by the schistose soil as well as delicate golden yellow appearance. This wine also has a surprising ability to reveal in its aroma, the soil composition of each vineyard.
Not very acidic, ice wine produced from Riesling goes extremely well with strong cheeses such as blue cheese like Stilton or Gorgonzola. The slightly acid and salty aromas of the cheese are tempered by the fruity sweetness of the wine, resulting in an intense interplay of aromas between the cheese and fruit.
