To me the quality of the ingredient is key, and we are fortunate to enjoy fantastic Welsh produce from a variety of local suppliers. We follow the seasons which means that our food is at its prime in the way that nature intended. I am working closely with the Palé gardeners to create a working kitchen garden, using organic methods and heritage varieties to be the mainstay of our vegetable offering.
