"I specialise in a fusion of Thai French/Italian cuisine but with an emphasis on always bringing out the true flavors of Thai herbs and spices. Two of my signature and award winning dishes are: snow fish sprinkled with black truffles served on a yellow curry sauce reduction, accompanied by fresh lychees in a mini vol-au-vent and a spicy Wagyu beef salad turned with Thai herbs and red grapes. It is very important to me to communicate directly with our guests on a daily basis, and regardless if on the menu or not, we can personalize existing dishes according to taste as well create totally new dishes if a guest so desires. I am always available to any guest that wishes to be accompanied to the local markets, and I am also delighted to give a private cooking lesson incorporating the products picked up from the local markets."
