Kendov Dvorec Manor is a stone’s throw from the point where the nearby Idrijca and Kanomljica rivers meet. Yet the marble trout native to these crystal-clear waters was, for a time, virtually extinct. To stem the disappearance of this colorful local species from the area’s rivers, those fishing in the region have taken strong action to repopulate them. The hotel plays its part in this conservation effort too. It helps raise awareness among those fishing on the importance of protecting marble trout by releasing them back into the river. And, when Chefs, Franci Pivk, Klavdij Pirih and Rok Sedej, source fish, an ingredient vital to their regionally-inspired cuisine, they work with a nearby supplier that farms trout in river basins that simulate conditions very similar to their natural environment.
