Participants then enter the family kitchen of El Colibri to prepare a three-course meal with their harvest, under the watchful and caring eye of the restaurant's chef. A unique moment of sharing, which will appeal to nature lovers and gourmets in search of culinary authenticity.

Immersive Cooking Classes

The gardens of El Colibri are a true ode to nature. Fresh flowers grow alongside fruits and vegetables, ready to be harvested for the restaurant. Created in 2011, the organic farm allows the property to offer exceptional meat, charcuterie, cheese and other dairy products.

Just four miles/seven kilometers from El Colibri, Santa Catalina, founded in 1622, is renowned for its remarkable colonial-era church. And nine miles/14 kilometers away, Jesus Maria is home to a museum dedicated to religious art from the 17th and 18th centuries, where you can also admire a beautiful collection of tableware and furniture from the period.

I have loved polo for years and it was a dream come true when I created my El Colibri Polo Club team, who compete in numerous tournaments on horses bred and trained on the estate. The two large fields are equipped with an irrigation system for an optimum lawn quality all year round. So anyone can take part, whether amateur or professional and whatever your level.
