Having begun his career in his native Germany, chef Joachim Koerper then travelled to France, Spain and Brazil before settling in Portugal. Assisted by resident chef Rodrigo Madeira and chef Vitalina Santos, an expert in traditional Alentejo dishes, he creates a delectable farm-to-table cuisine that privileges fresh produce grown on the estate’s farm. From the honey and eggs to the olive oil and bread, and from the vegetable garden to the orchard, everything is grown organically. As for the property’s Alentejo cattle, black pigs and lambs, all are local breeds raised through extensive farming.
