Serving light, regionally inspired dishes in a gastro-pub setting, Bistrot de Liège is open for lunch or dinner. Located in the former living quarters of Château St. Gerlach’s last aristocratic resident, the open kitchen with flagstone floor, antique stove and original Liège-style pantry create an informal, homely atmosphere. During warmer weather, tables are set outside in the Château quadrangle, with its pretty fountain and decorative gardens.

In order to preserve it, Château St. Gerlach sees controlling and limiting the environmental impact and risks as a key responsibility of its management and staff. The Green Key guidelines provide the structural basis for this policy. Green Key is an international certificate which represents sustainability for companies operating in the tourism and leisure industry. The property has been awarded the Golden Green Key Certificate. This is the highest award and means that the property not only complies with the required standards but in fact exceed them. This work continues in parallel with growing and producing local products from the estate itself: sparkling rosé wine, fruit juices, fruit jams, honey, tending the orchard (with rare species that help to maintain biodiversity) and sourcing seasonal, local products.
