In the Heart of the Dolomites

After taking the plane, train, and then car, I am now headed to Rosa Alpina in the heart of Italy's Dolomites to enjoy the mountain atmosphere for a breath of fresh air.

Chalets et prairies dans les Dolomites Italiennes
To arrive at Rosa Alpina, we took a mountain road in the direction of Val Badio which is found in the valley of South Tyrol.
The Dolomites are a UNESCO World Heritage Site at 1,500 meters above sea level in a unique setting...
...And one of the world's most beautiful ski resorts during winter.
But it is also quite astounding in summer for families in search of relaxation and sporting holidays.
With 800 residents, the village of San Cassiano is the epitome of tranquility.
Arriving at Hotel Rosa Alpina, the staff warmly welcomed me inside the lobby. I found these wooden sculptures that are truly typical of the region.
The Pizzinini family has owned and run Rosa Alpina for three generations.
In the restaurant St. Hubertus, chef Norbert Niederkofler has a passion for local ingredients.
It all started several years ago with a pizzeria, before he earned his stars – the first in 2001, followed by the second in 2006.
The cuisine of Norbert rests above all in the simplicity and balance of his dishes.
He calls his cuisine "Cooking the Mountain". It is a cuisine that is tied to nature, that of the mountains and Italy, hinted with the Austrian sounds of South Tyrol. Here is a dish cooked with pine.
Evenings are cool at 1,500 meters in altitude and, even during the summer, the night ends with a little fire in the chimney.
And when the morning arrives, a walk in the mountains is a must. Fresh air, silence, blue skies... it is a beautiful day to cross paths with a marmot.
