In Cancale, a few kilometers from the port, along the Breton coast, I arrived around noon at Maisons de Bricourt to meet Mr. Olivier Roellinger. The establishment's owner and former Michelin-starred chef, took the time to share with me the adventures of his life, his love for traveling and spices.
