Le Petit Bellevue consists of only six tables, and each table represents a certain version of conviviality in different centuries, from 1600 to 2000. The atmosphere at the Petit Bellevue is more intimate and cozy. The Petit Bellevue’s cuisine is rooted in mountain and Mediterranean tradition. Chef Marco Viganò and Sous-Chef Alessandro Esposito lead their brigade in a constant pursuit of new emotions while remaining faithful to tradition and the use of superb quality ingredients.

The Hotel Bellevue & Spa sits in a sea of rural tranquility, in Italy’s Gran Paradiso National Park in the region of Valle d’Aosta. It boasts an entirely new wellness center, covering an area of 1,200m2 with a strong focus on minimizing waste.
Energy is renewable, sourced entirely from hydroelectric power generated in Cogne’s Aosta valley. Pure water is piped directly from the Gran Paradiso Glacier and has enabled the complete elimination of bottled mineral water. Sustainability is designed into waste streams too, with all backwashings from the spa’s circuits pure enough to be recycled for irrigation. In addition, a commitment has been made to source only natural, local products. The wellness center draws on ancient herbal remedies, and preparations are made from glacier water and mud, blended with local honey, milk and wine. The center also offers traditional, organic cosmetics, sourced from the Profumo Santa Maria Novella: a 600-year-old Florentine pharmacy that uses ancient recipes to produce modern-day perfumes and skin care products.
