The spirit I have when I prepare a dish is the one of my first memory of the flavor of the main ingredient. Very often it’s a dish that my mother did for me or a roust ad poultry reared in the farm where I grew up, or sometimes the scent of a ripe tomato picked from the plant in a summer evening.

Here, chef Luigi Bergeretto places a strong emphasis on balancing high-quality natural ingredients and locally inspired creativity. In his eyes, this requires the careful forward planning of menus, with the involvement of the whole team.
A major aim is to maximize use of the freshest and highest-quality seasonal ingredients from the resort’s own organic kitchen garden and farm. Here, the methods are entirely organic and avoid all preservatives, herbicides and medicines. The resort also keeps its own goats, which graze on high among the hills, enabling the production of organic cheeses. Pursuing its passion for local, organic produce more broadly, the hotel has also launched a Sustainable Gourmet Festival. This comprises a series of three events dedicated to high-quality, healthy, and sustainable cuisine.
