Leaving the conservatory take a stroll up the pebbled path flanked by colourful herbaceous boarders overlooking the lawns and formal gardens and wander through the gazebo to the kitchen gardens of herbs, vegetables and fruits, where the chefs collect and gather for dinner. Continue through the woodland paths marvelling at the trees toward the tennis court and to the lake with its island planted with beautiful specimen shrubs and trees, and reached by the wooden bridge. Sit on a bench and listen to the ducks and the birds and watch the peacocks and thank God for all your blessings.
Our chefs day starts with a walk through the garden accompanied by our gardener. Together they decide which vegetables, fruits and herbs are to be used on tonight’s menu. Using fish from the sea just a few miles away, beef and lamb from one of Ireland’s best know meat producing counties and Irish cheese, famous the world over we know what a privilege it is for us to live here and have such wonderful produce in our garden and so near to our home, simple food that is so fresh it speaks for itself.
The ancient history of the South East coast of Ireland will fill your imagination and senses. From Kilkenny, the 12th century city capital of Ireland, with its castle and cathedral, the monastic settlement of Glendalough with its beautiful scenery, 13th century Enniscorthy Castle with battlements and dungeons, to Wexford town founded over a thousand years ago by the vikings. Live and breathe the smells and sounds of the Dunbrody Famine ship, an 1840’s emigrant vessle.
