family-run
the taste of Aubrac
ode to nature
inspiring views

Sébastien Bras has been at the helm of Le Suquet since 2009, and is forging his own path, reminiscent of the one his father also took. His intuitive and carefully crafted exceptional cuisine provides the perfect showcase for the treasures of the vegetable world offered by the Aubrac plateau. Imagination is given free rein in subtle pairings and harmonies which express this multifaceted living world. The pearly white monkfish and its black olive sauce tell of Gods battling in the skies over Aubrac: your plate is a fragment of the universe. Nature is at the very heart of the Bras family’s daily endeavours.

Corporate workshops

At Le Suquet, Chef Sébastien Bras shares his expertise as a team leader and business manager during unique workshops for corporate guests. Beginning with a visit to the restaurant's Lagardelle gardens, followed by a foraging session and sensory workshop, participants and chefs cook together, embracing the property's innate ‘Bras spirit.’ The day continues with a gourmet picnic and a stroll in Aubrac before concluding with dinner, including wine pairings, back at the restaurant. The property also organizes tailor-made seminars, specially adapted to your own company, team-members and objectives.

Individual masterclasses

Participate in an exceptional personal learning experience, combining education and gastronomy. After a welcome coffee in the kitchens of Le Suquet, you’ll take part in either a chocolate fondant workshop, led by pastry chef Benjamin Seignat, or a dedicated vegetable masterclass. Your immersion continues with a visit to the 'secret' garden of Michel Bras, guided by him or James, the gardener. The morning ends at the restaurant, with lunch arranged around the theme of Le Goût du Jardin, which will include your own culinary contribution from earlier in the day.

Itinerary - From Bordeaux to the Aubrac: sport, countryside and traditions

Escaping for a week's travel between New Aquitaine and Occitania is to discover the traditions, gastronomy, and some of the most sublime landscapes in Southwest France. These territories are stubbornly turned towards nature, and here, perhaps more than anywhere else, people live in harmony with it. See the itinerary
