More than a restaurant, it is the embodiment of French culinary arts in their most generous dimension, under the watchful eyes of General Manager Jean-Marie Ancher. Chef Alain Solivérès orchestrates a delicate symphony by interpreting the classics with modernity and elegance, like remoulade of crab with dill, spelt from the region of Sault in risotto, boudin of blue lobster.
